What are the main types of Chinese green tea?

There are many varieties of Chinese green tea, which can be divided into four categories according to the production process: ① Pan-fried green tea (Longjing, Biluochun); ② Baked green tea (Huangshan Maofeng); ③ Steamed green tea (Enshi Yulu); ④ Sun-dried green tea (Dianqing). How to brew Chinese green tea correctly?

The water temperature should be 80-85℃ to avoid scalding the tender leaves. The ratio of tea to water is 1:50 (e.g. 3g tea to 150ml water). It is recommended to brew in a glass or gaiwan. For the cup brewing method, fill the water and soak for 1-2 minutes. The top pouring method (water first and then tea) is suitable for bud tea, and the middle pouring method (half water pouring tea) is suitable for leaf tea.

Does green tea need to be washed?

Our high-quality green tea does not need to be washed. The first brew is rich in umami substances, and washing the tea is a waste. If you are worried about dust, you can quickly soak it in 80℃ water for 3 seconds and pour it out, but it is not necessary. It is recommended to wash the compressed tea or old tea.

How many times can green tea be brewed repeatedly?

High-quality green tea can be brewed 3-5 times using the cup brewing method. It is recommended to brew for 1-2 minutes for the first brew and extend for 1 minute for each subsequent brew. Young bud tea (such as Longjing) has a lower brewing tolerance, while leaf tea (such as Lu'an Guapian) has a higher brewing tolerance. When the tea taste becomes lighter, you can change it.

Can green tea be cold brewed? How?

Yes. Cold brewing of green tea can reduce bitterness and release sweetness. The recommended ratio is 1g tea: 100ml cold water, sealed and refrigerated for 2-4 hours. Why does my green tea taste bitter?

There are usually two reasons: 1. Brewing method. Keep the water temperature at 85℃ (185℉), add 2-3g of tea, and avoid steeping for a long time (10s for a gaiwan, 2min for a cup). If the brewing water temperature is too high, the amount of tea is too much, and the steeping time is too long, more catechins will precipitate, resulting in a bitter taste. You can also try cold brewing to avoid bitterness.2. Low grade of raw materials. If you prefer sweet tea, you can choose bud tea when buying tea. It contains less tea polyphenols and caffeine, which are the most important factors in producing bitterness.

How to store green tea?

Green tea storage needs to be protected from light, sealed, moisture-proof, and kept at low temperatures. It is recommended to use sealed bags to prevent oxidation of the tea leaves. It is best to store it in a refrigerator (0-5°C) and avoid storing it with odorous items. Long-term freezing is not recommended to avoid absorbing odors in the refrigerator.
