Where does matcha come from?

Jingshan, Yuhang District, Hangzhou, Zhejiang Province is located at 30 degrees north latitude, on the northeast peak of the Tianmu Mountains. This is the birthplace of matcha and the place where tea sage Lu Yu陆羽 wrote the "Tea Classic"茶经. Jingshan Temple was founded and flourished here.

From the production of powdered tea, Whisking tea to the pursuit of tea soup, the multi-attributes of powdered tea from daily drinking to cultural aesthetics have been constructed, which set off a grand occasion in the Song Dynasty, from ordinary people to emperors, who loved powdered tea.In the Ming Dynasty, the end tea gradually disappeared in China after policy reform, but this culture spread in Japan. At the end of the 20th century, China imported tencha production technology from Japan, and Zhecha Group cooperated with Japan Sanmei Co., Ltd. to restart the production of steamed green tea.In 2018, the national standard for matcha "GB/T 34778-2017 Matcha" was officially promulgated, making the development and production of matcha more regulated.

How to drink Matcha powder?

①Hot Brew/Traditional Way- Whisking Tea Method

The ratio of tea to water is 1:100, and the water temperature is about 80°C. Warm the cup and whisk together with hot water. Take a bag of matcha tea (1.2g) and pour it into a cup. Take 120ml of hot water, and while beating the tea soup with a tea whisk, add water several times. Drink after forming a fine and rich foam. Key points of the technique: When holding the tea whisk, straighten the five fingers, keep the four fingers together except the thumb, press the whisk handle in an arc in front, and grasp the whisk handle with the thumb behind, with the wrist and arm at a 90° angle, brush quickly, It's like drawing a "W"in a tea bowl. The faster the speed and the more uniform the frequency, the finer the tea foam will be.When hitting, the tea whisk hangs in the middle of the tea soup. Do not cling to the bottom of the bowl, and control the force well so as not to damage the tea whisk.

②Cold Brewing Method

The ratio of tea to water is 1:200-350ml.Put a bag of matcha tea (1.2g) into a cup, fill with cold water, shake well and drink. Thanks to the micron particle size, the whole process takes only seconds.

③ DIY Drink

Put the matcha powder into the cup, add a small amount of warm water to brew, pour the tea soup into coffee or milk to drink. Matcha can also be used to make various desserts, such as matcha ice cream, matcha cake and more.
