There are usually two reasons: 1. Brewing method. Keep the water temperature at 85℃ (185℉), add 2-3g of tea, and avoid steeping for a long time (10s for a gaiwan, 2min for a cup). If the brewing water temperature is too high, the amount of tea is too much, and the steeping time is too long, more catechins will precipitate, resulting in a bitter taste.
