什么是茉莉红茶?

这款茶融合了武夷山高山红茶和广西茉莉花,因此得名“茉莉红茶”。

茶原料来自世界红茶发源地、世界文化与自然遗产武夷山国家级自然保护区核心区的高山茶树,采用骏眉红茶的创新工艺制成。骏眉红茶采用广西盛放的茉莉花,并采用独特的窨制技术,使茶叶充分吸收花香。

通常的茉莉花茶采用绿茶与茉莉花结合的方式制作,今天,当骏眉工艺遇见茉莉花,我们又产生了大胆的想法。红茶与茉莉花,其制作难度超出我们的想象。为了能窨制出最好的茉莉红茶,制茶师们进行了反复的试验,从红茶与茉莉花的配比用量,到“一窨”至“八窨”,不断尝试,窨少了,花味不显;窨多了,冲了茶味。四窨一提,茶香与花香融合得刚刚好,有茶的清甜,有花的鲜灵。

制作流程是怎样的?

茶胚加工:过去茉莉花茶是用绿茶为基底制作的,现在白茶、红茶和乌龙茶也很常见,但与绿茶相比,其他茶类更难吸香,制作难度也更高。

这主要是由于茶类和工艺的局限性:红茶不易吸香,制作时需要更多的茉莉花,施肥时间也更长。但如果工艺不好,红茶时间长了容易变酸,难度是茉莉花绿茶的2-3倍;此外,茉莉花红茶的茶胚必须是清淡甘甜的红茶,传统红茶则偏厚重、红润、微苦,而俊眉红茶恰到好处。

绿茶性寒,易挥发,口感和香气易挥发,受品尝季节和人群限制。红茶则性温,口感更醇厚,滋补养胃,四季皆宜。

花材处理

茉莉花的采摘要求非常严格,需要在三伏天(夏季炎热闷热的日子)下午2-3点采摘,此时气温最高。花材在夜间自然绽放时香气最浓。

玉兰花的香气比茉莉花更浓郁,因此茉莉花茶在施肥前会先用玉兰花催芽,然后再用茉莉花施肥,以增加整体香气浓度。

窨制:将茶胚与花混合后,以白玉兰花为基底,约5-6小时完成。此外,温度过高时需及时摊开散热,花朵在长达10-15小时的窨制时间后会枯萎。下次窨制前,还需要将茶花分开,并将茶叶晾干。

制茶师一直努力寻找最佳的四窨一提花方法,既不掩盖茶香,也不掩盖茶味,茶香与花香交融得恰到好处,展现出茶的甘甜与花香的完美平衡。

茉莉花茶里是茶还是花?

经过三重筛选,去除 100% 的花朵,仅保留香气。茉莉花香融入茶叶中,消除花瓣吸湿,延长最佳饮用期。

品饮方式

盖碗泡:择器温杯,选择白瓷盖碗为佳,投茶4克,以95°C山泉水或纯净水冲之,茶香四溢。无需洗茶,1-3道茶汤即冲即出,之后相对顺延坐杯时间5-15秒,把握浓淡。

杯泡:投茶2克,以90°C山泉水或纯净水冲之
无需洗茶,浸泡1-2分钟后饮用,可反复冲泡2-3次。
冷泡:将2克茶叶投入矿泉水、冰水中,也可放入冰箱,静待两三个小时即可饮用。

Why Choose Black Tea as the Base?

Unlike traditional jasmine green tea, making jasmine tea with a black tea base is exceptionally challenging. The tight internal structure of black tea makes it less absorbent to fragrance, and improper process control can easily lead to sourness, making its production difficulty 2-3 times that of jasmine green tea. We took on this challenge because the innovative Jun Mei craftsmanship successfully produces a black tea base that is light and sweet, perfectly avoiding the heavy astringency of traditional black tea and providing a pure “canvas” for absorbing the floral aroma. Ultimately, the warm, stomach-nourishing properties of black tea combined with the fresh fragrance of jasmine result in a healthier tea beverage with a fuller, mellower taste, suitable for a wider audience and enjoyable throughout all four seasons.

What is “4 Infusions 1 Final Touch”?

“Scenting” is the core process in making jasmine tea. We layer the processed tea base with freshly bloomed jasmine flowers at night. Under suitable temperature and humidity, the tea leaves naturally absorb the floral fragrance through their pores. Each scenting cycle lasts over 12 hours. After the fragrance is fully absorbed, the spent, wilted flowers are meticulously sieved out by hand, and the tea is gently dried. This completes “one infusion.” Repeating this process four times constitutes “four infusions.” The “one final touch” refers to using a small amount of high-quality fresh flowers in the final step for a brief aroma enhancement, consolidating the fragrance. This is far from simple repetition; it is the perfect balance point found by tea masters through countless trials. Insufficient infusions result in weak floral notes, while excessive infusions make the fragrance overpowering and mask the tea’s flavor. Four infusions and one final touch represent the perfect harmony where the tea aroma and floral fragrance achieve a balanced, natural, and seamless union.

Brewing Methods

Gaiwan Brewing

Use 4g of tea. Brew with 95°C mountain spring or purified water - the tea aroma will abound. Pour the soup,1 courses soak for 5s,pour it out.Washes away the dust from the aging process, and also acts as a process to awaken the taste of the tea.2-4 courses soak for 5s-10s, and 5-10 courses soak for about 15-30s. Old white tea is not feel astringent after brewing for a long time.

Directly Use Pot To Boil

UPour the tea, put 8-10g dry tea. Steam, add cold water/hot water, set the steaming time for 10-15min, you can add dried tangerine peel to steam together, the flavor is better. You can add water and cook 3-4 times until the soup becomes clear.

Mug Brewing

Use 3g of tea. Brew with 90°C mountain spring or purified water.Steep for 3 min before drinking. Can be re-steeped 4-5 times, appropriately extending the steeping time each time.
