During the Western Han Dynasty more than 2,000 years ago, Wu Lizhen, the ancestor of tea planting, planted seven tea trees on the Mengding Mountain in Sichuan, which started the history of artificial tea cultivation. Here, the drizzle is hazy all year round, and the annual precipitation is more than 2000mm, which is very suitable for the growth of tea trees. In the folk, Mengshan tea is regarded as a divine thing to cure diseases, so Mengding tea with a long history is also called "fairy tea". For many tea lovers, tasting this cup of tea soup from the ancient Chinese tea tree means the beginning of the new year of tea. While other tea areas in China were still quiet, but the temperature in Sichuan had already warmed up, and the tea on Mengding Mountain had buds. The spring tea before the Ming Dynasty is the most precious and rare. Purely hand-picked single buds, wrapped in rich and dense tea, the soup color is blue and clear, the taste is fresh and sweet like dew, and the teeth and cheeks are fragrant.
There are many varieties of Chinese green tea, which can be divided into four categories according to the production process: ① Pan-fried green tea (Longjing, Biluochun); ② Baked green tea (Huangshan Maofeng); ③ Steamed green tea (Enshi Yulu); ④ Sun-dried green tea (Dianqing). According to appearance, it can be divided into flat, spiral, needle-shaped, etc., and the flavor varies from fresh to mellow.
Green tea is rich in tea polyphenols and amino acids. Its main functions are: ① Anti-oxidation and anti-aging; ② Refreshing the mind and enhancing concentration; ③ Promoting metabolism and assisting in controlling sugar and reducing fat; ④ Refreshing breath, inhibiting bacteria and protecting teeth. It is necessary to drink in moderation, and 3-5 grams is recommended per day.
Green tea is suitable for drinking throughout the day, but the best time is in the morning or 3-5 pm in spring, summer and autumn. It can refresh the mind in the morning and help digestion with tea in the afternoon. Avoid drinking on an empty stomach to avoid irritating the stomach; it is recommended to drink less strong tea 3 hours before going to bed to avoid caffeine affecting sleep.
Green tea has a moderate caffeine content, higher than black tea and oolong tea, but lower than white tea. Each cup (200ml) contains about 40-60mg of caffeine, which is about 1/2 of the same amount of coffee. People who are sensitive can choose tender bud tea before Qingming Festival (lower caffeine).
The water temperature should be 80-85℃ to avoid scalding the tender leaves. The ratio of tea to water is 1:50 (e.g. 3g tea to 150ml water). It is recommended to brew in a glass or gaiwan. For the cup brewing method, fill in the water and soak for 1-2 minutes. The top pouring method (water first and then tea) is suitable for bud tea, and the middle pouring method (half water pouring tea) is suitable for leaf tea.

Young bud tea (such as Longjing) has a lower brewing tolerance, while leaf tea (such as Lu'an Guapian) has a higher brewing tolerance. When the tea taste becomes lighter, you can change it.
Yes. Cold brewing of green tea can reduce bitterness and release sweetness. The recommended ratio is 1g tea: 100ml cold water, sealed and refrigerated for 2-4 hours. There are usually two reasons: 1. Brewing method. Keep the water temperature at 85℃ (185℉), add 2-3g of tea, and avoid steeping for a long time (10s for a gaiwan, 2min for a cup). If the brewing water temperature is too high, the amount of tea is too much, and the steeping time is too long, more catechins will precipitate, resulting in a bitter taste. You can also try cold brewing to avoid bitterness.2. Low grade of raw materials. If you prefer sweet tea, you can choose bud tea when buying tea. It contains less tea polyphenols and caffeine, which are the most important factors in producing bitterness.
Green tea storage needs to be protected from light, sealed, moisture-proof, and kept at low temperatures. It is recommended to use sealed bags to prevent oxidation of the tea leaves. It is best to store it in a refrigerator (0-5°C) and avoid storing it with odorous items. Long-term freezing is not recommended to avoid absorbing odors in the refrigerator.
